8 ostriche di medie –

1 mazzo di menta fresca –

1 cucchiaio di peperoncino in polvere –

1 limone –

1 spicchio d’aglio –

Sale q.b.

300 ml. olio extravergine di oliva


Con un coltellino a punta, aprire le ostriche partendo lateralmente, stando attenti ad effettuare il tutto molto lentamente, in quanto i loro gusci potrebbero risultare molto taglienti.
Una volta aperti i frutti di mare, raccogliere l’acqua custodita al loro interno, filtrandola con un colino a maglia fine. In una ciotola, creare una salsa a freddo a base di peperoncino, olio, acqua di ostriche e menta tritata.
Successivamente unire l’aglio in camicia leggermente schiacciato, il succo di limone e con una forchetta sbattere energicamente per circa un minuto, in modo da amalgamare tutti gli ingredienti.
Scegliere 4 germogli di menta fresca che utilizzeremo per decorare il piatto finito con le ostriche servite insieme a un bicchierino della salsa preparata in precedenza.
